What are the Essential Barista tools?
Flat head screw driver (For removing your shower screens to clean daily.)
Spanner (For removing the tips of your steam wand.)
Cleaning brushes (Specifically large and small steam wand cleaning brushes, we recommended and use the brand Pallo.)
Group head cleaning brush (Ideally one with a pin on the end for cleaning the steam wand tips.)
Digital Scales (This is very important to make sure you are dialed in properly and should be kept very close to the espresso machine & grinder.)
How do I texturise milk properly?
View Video on YoutubeThe goal of proper milk preparation is to create perfect microfoam. This finely textured milk is smooth, fluid, and blends perfectly with well-prepared espresso. Ideal microfoam should have the semi-gloss appearance of wet paint, and should be smooth and sweet, with no graininess, or visible bubbles.

**Please contact your roaster for their recomended dose for the coffee they are supplying you.**
As a rule of thumb: most coffees we deal with are roasted Ligh-Medium, so our Brew Ratio reflects that.
We work off a 1:2, Coffee:Water, brew ratio.
So for example if you were to use 20gs of ground coffee in, we would want 40mls of liquid coffee out, in 24-32 seconds (adjust to taste).Why is my coffee is taking forever even though there is the correct dose in the basket?

How to Clean Your Espresso Machine
At the end of each day your espresso machine and grinder must be cleaned down.
The start of this process you can take off the shower screens with a small flat head screw driver (Only if these can be removed on your machine and only if you feel comfortable.)
Remove the steam wand tips and leave them to soak in warm water with a bit of machine cleaner along with the shower screens. You can also put in the screws from the center of the shower screens and the baskets from the portafilters if you want to.
Backflush your machine with the blank basket and a small scoop of espresso machine cleaner. This is usually done by inserting it into the machine as normal and then using the continuous flush button for 5 seconds on then 5 seconds off, you should do this cycle 10 times on one group and then repeat on every other group head.
While the other items are soaking clean out your steam wands with a wand cleaning brush, you can only do this while the tips are off so it is good not to skip this. This build up can damage your machine and affect the quality of your milk texturizing.
You should also wash your portafilters by hand instead of leaving them soak as this will cause the plastic/rubber handle to wear down quicker.
After all of this is done you can wipe down the machine with a clean cloth, standard anti bacterial spray and warm water. Reassemble the shower screens and steam wand tips then you are ready to serve some great coffee again.

How do I stop my Mahlkonig E65S or E80 shooting out the side?
View Video on YoutubeYou need to clean the silicon flapper.
**Please note, If you just cleaned it and then it started shooting out to the side. This means the silicon flapper is probably pretty seasoned, and has been in one way the whole time, and it was then put back the other way. So if you filp the silicon flapper, this usually resolves the issue.
